This holiday season, we’re delighted to bring you another Christmas recipe from Elise Pulbrook, MasterChef semifinalist and cookbook creator. Elise’s Chamomile Blossom Panna Cotta adds a festive touch to your table, highlighting Tea Drop’s Chamomile Blossoms, available individually and in our Wellness Brews and Restful Retreat Gift Packs as part of our limited-edition Christmas Collection, crafted to bring calm and warmth to the season.

Imagine a luscious panna cotta that’s light, creamy, and elegantly infused with chamomile, paired with delicately poached apricots. With its beautiful aroma and soft, floral flavors, this dish is perfect for a holiday dessert, spooned out with fresh or poached seasonal fruit for a delightful finish.

Chamomile Blossoms Panna Cotta Recipe

Serves: 8 | Prep time: 10-15 minutes plus 30 minutes infusing | Setting time: 6 hours

Ingredients:

• 150ml full cream milk
• 850ml thickened cream
• 5 heaped tablespoons Tea Drop Chamomile Blossoms
• 100g honey (orange blossom honey is ideal)
• 4 gelatine leaves (from a pack where 15 leaves weigh 25g)

Instructions:

1. In a saucepan, combine the milk, cream, chamomile blossoms, and honey. Bring to a gentle heat, stirring occasionally to submerge the chamomile. Just before boiling, turn off the heat and let the mixture infuse for 30 minutes.

2. Soak the gelatine leaves in cold water for 3 to 5 minutes until softened.

3. Reheat the infused mixture until it’s nearly boiling. Remove from heat and strain one cup into a heatproof bowl. Squeeze out the gelatine leaves and whisk into the warm liquid until dissolved. Add back the remaining strained liquid and discard the tea blossoms.

4. Stir the mixture over a bowl of iced water to cool. Pour into a 1L fluted dish or individual moulds. Refrigerate for at least 6 hours.

5. To unmould, dip the bottom of the mould in hot water for 5 seconds and turn onto a plate. Serve with chamomile-poached apricots or fresh berries.

Chamomile-Poached Apricots Recipe

Ingredients:

• 500ml water
• 250g sugar
• 2 heaped tablespoons Tea Drop Chamomile Blossoms
• 1 vanilla pod (optional)
• 500g apricots, halved and stoned

Instructions:

1. Place apricot halves in a clean, heatproof jar.

2. In a saucepan, combine water, sugar, chamomile, and vanilla. Bring to a boil, then simmer for 5–10 minutes to infuse.

3. Strain the syrup over the apricots, discarding chamomile and vanilla pod, then seal the jar. Let cool, and refrigerate for at least 1 day to deepen flavours.

Tea is one of the world's oldest rituals. It outlasts empires, punctuates grief, anchors mornings, and closes the space between strangers. It is the most drunk beverage on earth after water — and yet, in most kitchens, it is still being made too quickly, with too little thought. That gap is the reason Tea Drop exists.

Why May matters — for tea, and for us

May is the month the world pauses to celebrate tea. International Tea Day, designated by the United Nations and observed on 21 May, recognises tea's role in culture, trade, and the livelihoods of millions of farmers worldwide. It is a moment to think beyond the cup: to the hands that picked the leaf, to the communities built around the gardens, to the ancestral knowledge preserved in every harvest.

It is also, not by coincidence, the month Tea Drop was born.

Twenty-two years ago this May, Ashok Dias founded Tea Drop in Melbourne, and the fact that our anniversary falls in the same month the world gathers to honour the leaf has always felt like more than chance. May is, for us, a season of reflection: on where tea comes from, on what it means to do it well, and on why any of this matters.

On ritual, tradition, and the patience of good tea

There is a particular kind of patience required to make great tea, and an equal patience required to appreciate it. The ritual of boiling water, choosing a blend, watching the pyramid bag bloom in the cup: these are small acts that do something measurable to the pace of a day.

Tea culture has always understood this. High tea traditions across Britain, gong fu ceremony in China, the elaborate preparation of Japanese matcha, the daily chai ritual across the Indian subcontinent — all of them are expressions of the same truth: that the act of making tea is inseparable from the act of drinking it.

That understanding is not learned from books. It is also, increasingly, at risk. As tea production scales and convenience dominates, the quiet artistry of the tea garden gets compressed into commodity. International Tea Day exists in part as a recognition of that tension: a reminder that the alternative still exists, for those who seek it out.

Twenty-two years in Melbourne

Ashok grew up in Sri Lanka, in a family with three generations of tea merchants and farmers behind them. He came to Australia not simply to sell tea, but to reconnect a new audience with the soulful, careful work that precedes every cup. That mission has not changed.

This May, as Tea Drop turns 22 and International Tea Day approaches, the occasion feels less like coincidence and more like purpose.

How to make:

• In a medium saucepan, heat the milk over medium heat until it starts to steam.
• Add the chocolate and stir until it's melted and combined with the milk.
• If desired, add sugar and continue stirring until it's completely dissolved.
• Remove from heat and serve immediately.
• This basic recipe can be customized to your liking by adding different flavors such as vanilla extract, cinnamon, or even a pinch of cayenne pepper for a spicy kick.

Ingredients: - 2 cups of milk of your choice, 40g Tea Drop Artisan Drinking Chocolate, 1/2 cup of carrot juice , 2 tbs of Tea Drop chai concentrate & Whipped cream (optional)

Instructions:  In a medium saucepan, heat the milk over medium heat until it starts to steam. 2. Add the chocolate, carrot juice, and chai concentrate and stir and combine with the milk. 3. Remove from heat and pour into mugs. 4. Top with whipped cream and a sprinkle of cinnamon and enjoy!

• Marshmallow Hot Chocolate

Ingredients: - 2 cups of milk of your choice, 40g of Tea Drop Artisan Drinking chocolate, 4 marshmallow squares & Whipped cream (optional)

Instructions: In a medium saucepan, heat the milk over medium heat until it starts to steam.  Add the chocolate and marshmallow and stir until they're melted and combined with the milk. Remove from heat and pour into mugs. Top with whipped cream and more marshmallows and enjoy!
