Our Honey Spice Sticky Chai makes a truly indulgent latte, but it’s not just for drinking! Its bold and aromatic flavour make it the perfect addition to a classic - the Panna Cotta!

Ingredients

2 1/4 teaspoons of unflavoured gelatin powder
2 1/2 cups cream
2 1/2 cup sugar
1/2 cup vanilla bean
4 tablespoons Honey Spice Sticky Chai
1/2 cup water

To make the Panna Cotta

Sprinkle a single layer of 2 1/4 teaspoons of unflavoured gelatin powder over a small bowl of water.
Let stand for 5-10 minutes until softened.
In a medium saucepan, heat 2 cups heavy cream, 1/4 cup of sugar and 1/2 vanilla bean. Bring to the boil, until sugar dissolves.
Remove from heat, discard the vanilla bean and whisk in gelatin immediately until smooth and dissolved.
Pour mixture into 4 individual serving dishes and refrigerate for at least 2-4 hours.

To make the Honey Spice Sticky Chai sauce

Place 4 tablespoons of our Honey Spice Sticky Chai into a medium saucepan.
Add 1 cup of cream.
Over a medium heat, bring the mixture to a simmer, be careful not to boil. Remove from heat, cover and allow the tea to steep until the mixture cool. Strain the cream, and put aside.
Whisk 1 1/2 cups sugar into 1/2 cup of water, then cook over a medium heat until sugar dissolves. Increase heat to medium-high and cook without stirring for 15-20 minutes, until the mixture begins to caramelise.
When the mixture turns a medium tan colour, remove the saucepan from heat and carefully stir a couple of tablespoons of chai at a time. Continue this until mixture is smooth.
Cool to room temperature and store in the fridge.
Top each Panna Cotta with a dollop of the Chai sauce and viola!

If you love our Peppermint tea and chocolate. Here's a fantastic recipe for some delicious peppermint chocolate brownies!

Ingredients

145g unsalted butter; more for greasing the pan'
120g dark chocolate, 60-70% cacao, roughly chopped
45g unsweetened Dutch process cocoa powder
1/2 tbp. espresso powder
4 tsp. Tea Drop peppermint tea leaves
250g dark brown granulated sugar
3 large eggs
1/4 tsp. kosher salt
65g all-purpose flour

How to make

Center a rack in the oven and heat the oven to 350°F. Butter the bottom and sides of a 7×11-inch baking pan, line it with parchment (the paper should extend at least an inch above the long sides to act as handles for getting the brownies out), and butter the paper.

Combine the chopped chocolate, cocoa powder, and espresso powder in a heatproof bowl and set aside.

Add the butter and 2 teaspoons of peppermint loose leaf tea to a small saucepan over medium heat and cook the butter for about 5 minutes, swirling the pan occasionally.

Immediately filter out the tea and pour the hot butter over the chocolate mixture and whisk until the chocolate is completely smooth and melted, then set aside.

Combine the brown sugar, 2 teaspoons of peppermint loose leaf tea and salt in a food processor and finely grind and set aside.

Add the eggs in a large bowl and beat with an electric hand mixer on high speed until light and fluffy. Thereafter mix the finely grounded sugar with the eggs and whisk again.

With the mixer on, pour in the slightly cooled chocolate butter mixture and blend until smooth. Sift in the flour and use a rubber spatula to gently fold until combined.

\"Pour the batter into the prepared baking pan and smooth the top with a spatula and bake for around 40mins, until a wooden skewer inserted into the center of the brownies comes out fudgy but the edges look cooked through. The center of the brownies will seem under-baked, but the brownies will continue to set as they cool.\"

\"Set the brownies on a cooling rack and cool completely in the pan. Use the parchment paper to lift the cooled brownies out of the pan. Cut into 12 or 15 bars.\"

We think its safe to say everyone loves a sweet bite of something after dinner. Matcha is known for its distinctive aroma and flavour. So we brought our love for matcha and white chocolate and made our version of matcha truffles. You can never go wrong with a truffle or two - or an entire box. We are not judging.

Ingredients (aprx. 20-25 serves)

100ml heavy cream
2 tbsp Tea Drop Matcha Powder\n
250g white chocolate, chopped fine
1 teaspoon vanilla extract

Topping Ideas (optional)

Chocolate coating white/dark/milk
Chocolate sprinkles
Chopped nuts
Coconut flakes

How to make

In a heat-proof bowl add heavy cream, vanilla extract and matcha powder and whip together.

note : add matcha powder using a fine mesh strainer to make sure there are no clumps.

Add the chopped chocolate to the bowl and melt over simmering hot water at very low heat. Stir to become a uniform colour.

Refrigerate at least 4 hours.

Use an ice cream scoop and portion out truffle onto parchment paper.
Roll each truffle between your palms till you create a perfect ball, don’t worry our hands got messy too.
If the truffles get too soft don’t worry, place in the fridge for 10 minutes.

Coat truffle with preferred topping (this is optional).

The only difference in ingredients will be the infusion of tea.

How to make Matcha Ice Cream

Using a saucepan heat the milk.
Add sugar and Matcha to hot milk and stir.
In a separate heat-proof bowl, whisk the egg yolks together.
Then slowly pour the warm milk into the egg yolks and continue to whisk till mixture thickens.
\nNote: Make sure the milk is not too hot when pouring over eggs and that you keep whisking on.
Place this in the freezer for 5 hours.
In a separate bowl add heavy cream, vanilla extract and whip together till soft peaks form.
Now take out the mixture from the freezer and whip together with the cream using an electric hand mixer.
Place back in the freezer overnight or at least 8 hours.

How to make Chamomile Ice Cream

Using a saucepan heat milk.
Add sugar and honey to hot milk and stir.
In a separate heat-proof bowl, whisk the egg yolks together.
Remove pan from heat, add the Chamomile Blossoms tea. Let it steep for 10 minutes, then strain milk into a clean pan.
Then slowly pour the warm milk into the egg yolks and continue to whisk till mixture thickens.
Place this in the freezer for 5 hours.
In a separate bowl add heavy cream and whip till soft peaks form.
Now take out the mixture from the freezer and whip together with the cream using an electric hand mixer.
Place back in the freezer overnight or at least 8 hours.

How to make Chai Ice Cream

Using a saucepan heat milk.
Add sugar to hot milk and stir.
In a separate heat-proof bowl, whisk the egg yolks together.
Remove pan from heat, add the Malabar Chai tea. Let it steep for 10 minutes, then strain milk into a clean pan.
Then slowly pour the warm milk into the egg yolks and continue to whisk till mixture thickens.
Place this in the freezer for 5 hours.
In a separate bowl add heavy cream and whip till soft peaks form.
Now take out the mixture from the freezer and whip together with the cream using an electric hand mixer.
Place back in the freezer overnight or at least 8 hours.

Scoop the ice cream into popsicle molds if you want them to be fun pops. Either way they are delicious and a great way to beat the heat this summer!

We wait all year long to decorate our Christmas trees, unwrap presents and engage in some festive baking. Since medieval times the scent of cinnamon along with cardamom, nutmeg, ginger and cloves is how we know its Christmas.

So if you are obsessed with cinnamon rolls as we are and love the flavours of chai, with this recipe you can taste Christmas all year long.

What you need:

Dough

580g all-purpose flour
100g granulated sugar
6g fine sea salt
84g butter
235ml lukewarm milk
7g instant yeast
2 eggs
1 egg yolk

Filling

190g powdered brown sugar
5 tablespoons Tea Drop Traditional Chai Latte Powder\n
84g butter

Frosting

115ml Heavy cream
90g powdered brown sugar
3 teaspoons Traditional Chai Latte Powder\n

How to rock and roll?

In a large bowl add flour, salt, softened butter and eggs.
In a separate bowl warm up the milk and add sugar and yeast and stir till it dissolves. (Warm milk not hot - we do not want to kill the yeastlings)
Begin mixing the flour mixture by slowly adding the milk mixture to it. You can use a standard mixer bowl to speed up and the process but we did it the old fashion way and used our hands to knead the dough. (this takes time and can get messy)
Knead the dough till it loses its stickiness and doesn’t stick to the surface.
Roll up the well kneaded dough into a ball and let it sit in the bowl covered with a plastic wrap. Let it rise for an hour or until doubled.
Now whisk together the brown sugar and the Traditional Chai Latte powder\n
Lightly flour a work surface and roll the dough out into a large and thick rectangle with even edges.
Spread the softened butter evenly over the dough.
Sprinkle evenly the chai sugar.
Tightly roll up the dough, forming a thick log and cut into 12 evenly sized pieces. Each about 2 inches thick.
Lightly grease a baking dish and fill it with the rolls. Cover with plastic wrap and let it rise for 30 minutes.
Remove plastic wrap. Bake the rolls in a pre-heated oven for 25-30 minutes, until golden brown at 170 ˚C.
In a medium-size mixing bowl, whisk together heavy cream, Traditional Chai Latte powder and powdered sugar until smooth.
Go ahead and drizzle on your chai cream frosting over the freshly baked rolls while it’s still warm.

If you ask a room full of people what they want for dessert someone is bound to shout “Tiramisu”.
Tiramisu is an Italian dessert consisting of coffee dipped lady fingers layered with mascarpone cheese and powdered chocolate.

We decided to give this classic recipe a little Tea Drop twist by switching out the coffee with our very own Tea Drop Matcha. By adding matcha to the mix you unlock a whole new dimension of versatile flavour, leaving a lingering sweetness in your mouth after every bite. Not to forget matcha is packed full of antioxidants and is a great coffee replacement as it gives you clean energy without the coffee crash!

What you need:

6 large egg yolks
170g brown sugar
450g mascarpone cheese
235ml heavy cream
2 tablespoons Tea Drop Matcha Latte and a little extra for sifting
4 tablespoons Kithul treacle
350ml water
24-30 ladyfingers

How to make the tiramisu cream:

In a medium saucepan whisk 6 egg yolks until they are slightly lighter in color. Add 170g brown sugar while continuing to whisk the yolks until thick and creamy.
Place saucepan over a double boiler and let it steam and keep whisking till soft peaks form.
In a sperate bowl whisk 450g of mascarpone till it’s smooth.
Now combine that with egg yolk/sugar mixture and fold together. (make sure there are no lumps)
In a separate bowl whisk the heavy cream but not too hard because we don’t want the cream to get too thick, we want it to be nice and fluffy.
Now combine that with the mascarpone and fold together.

Assembly:

Add 2 tablespoons of matcha and 4 tablespoons of kithul treacle to baking pan with 350ml of hot water.
Whisk the tea in a back-and-forth motion until the surface of the matcha becomes frothy.
Dunk lady fingers into matcha mixture (not for too long as it may fall apart very quickly) and line them up in a separate baking pan evenly, so the bottom is covered.
Once the bottom is filled add half of the tiramisu cream on top.
Now arrange another layer of matcha dipped lady fingers on top and add remaining tiramisu cream on top.

Everyone’s heard of iced tea, but you may be wondering what flash chilled ice tea is. And wait, isn’t cold brew a coffee?

In this post, we’re going to take you on a journey into the wonderful world of ice teas and explain how you can get your fix now or save it till later with our easy-to-follow recipes.

More about chilled tea

Chilled tea or iced tea has been a beverage enjoyed since the 1870s when it was first consumed in the southern United States. Perfect for the region’s hot and steamy climate, it soon became a popular choice for its thirst-quenching properties.

The perfect alternative to alcohol or fizzy drinks on a hot summer’s day, not only is iced tea refreshing, thanks to its high water content, but it also contains antioxidants that help fight disease.

Individual tea blends will contain their own health benefits too, so our Lemongrass Ginger blend – perfect for ice tea – offers the detoxifying benefits of lemongrass, while ginger provides protective anti-inflammatory properties.

And last but not least, ice tea can be made in a whole spectrum of exciting flavours to suit every taste. A great iced tea makes you pause and take notice. It's flavour profiles are different from hot tea, but done right, is just as worthy of savoring.

Making iced tea is so easy

Not only is cold tea thirst-quenching and delicious, but making iced tea is also so much easier than you think. The two methods best known for making iced tea are cold brew and flash chilled.

The question you need to ask yourself to find out which process will work best for you is: when do you want to drink your iced tea?

To make flash chilled iced tea

If the answer is now, then flash chilled is the way to go. This process will take no more than five minutes to complete.

Step 1. Select your preferred tea. Try Lemongrass Ginger or Fruits of Eden.

Step 2. Put tea in our Tea Drop tea maker. Double the weight of your tea and halve the volume of water. For example, if you normally use 3 grams (1 teaspoon) of Lemongrass Ginger for a hot tea, use 6 grams (2 teaspoons) for your cold tea. And if you use a standard 230 ml of hot water, drop that down to 150 ml of hot water.

Step 3. Let brew for 3 minutes.

Step 4. Place the tea maker over the serving glass filled with ice and watch the tea fill the glass in seconds. Stir and garnish with fruit.

Step 5. Put your feet up, and drink like you’re a Hollywood star!

To make cold brew iced tea

If you know that some warm weather is coming and you want to make some cold infused tea for the weekend, then cold brew tea is possibly a better option.

The cold brew iced tea method is literally putting the tea in a fridge with cold water and steeping overnight. The colder temperature doesn’t steep out the tannins the way hot water does, so cold brewed tea is actually less astringent and less caffeinated. This process is even easier but will take 10-12 hours until the tea is ready to drink. You also get to enjoy and savour the different flavour profiles of the tea - sweet, refreshing, and full of great body and an aftertaste that cools the throat. It stays fresh tasting for days.

Step 1. Select your tea and measure out 10 grams into a 1.2litre jug. For this, we recommend trying Sweet Peach, or why not try African Sunset to capture that summer floral vibe?

Step 2. Add 1 litre of cold water. There’s no need for a specific temperature –cold filtered water from the tap will be just fine.

Step 3. Place in the fridge for 10-12 hours.

Step 4. After 12 hours, strain off and store in a bottle for up to seven days. The drinks are on you at your next BBQ!

International Tea Day was initiated by the United Nations in 2019, with the aim of recognising tea farmers and workers across the supply chain who bring us the tea leaves that go into the world’s most popular drink, after water. At ETP, this is what we do, every day: we work tirelessly to help our members address the issues in tea. However, I believe that a dedicated day to reflect on these issues is an important moment in the calendar of any tea producer, packer, retailer or consumer; the challenges are complex and widespread, requiring collaboration and investment on a huge scale if we are going to improve the lives and livelihoods of tea workers.

Globally, more than 13 million people are involved in the supply chain, and for the majority their livelihoods are almost entirely dependent upon the production of tea. The UN’s Food and Agricultural Organisation (FAO) estimates that nearly 60 percent of the world’s tea is produced by small scale farmers. Social inequalities, economic instability, and the threat of climate change are some of the biggest challenges facing these tea communities.

Economic instability for tea communities if often a result of the lower wages and incomes that workers and farmers earn and the context in which they live. This is often in the world’s poorest countries such as India, where nearly one million workers are employed within the tea supply chain.

Globally, the majority of tea workers and farmers are women. In Assam, India and Sri Lanka women make up nearly 50% of the tea workers yet, few manage to rise through the ranks to managerial positions.

Climate change poses a growing risk to tea communities as increasing temperatures, changes to rainfall, and deforestation impact tea growing and ultimately the livelihood of those working in tea.

At the Ethical Tea Partnership (ETP), we work with 50 members – made up of tea brands, retailers and suppliers from across the UK, Europe, North America, Asia, Australia, and New Zealand. Together we address some of the long-term systemic challenges in tea. We run programmes in China, India, Kenya, Sri Lanka, Malawi, Rwanda, and Indonesia, where much of the world’s tea is produced and where millions of lives are dependent on tea; we support innovative business practices to improve outcomes for farmers and workers in tea; and, we engage with a wide network of stakeholders to inform decision-making and policy development, ensuring that tea communities are put front-and-centre of this process.

Spice up your breakfast with this simple and easy recipe for some light, fluffy and flavorful pancakes, using our very own Tea Drop Chai Concentrate.

They are simple delicious go on give it a Chai.

What you need:

250g all-purpose flour
2 tsp baking powder
1 tsp salt
2 tbsp Kithul Treacle
3 tbsp Chai Concentrate
1 egg yolk
70g unsalted butter
250ml warm milk

How to make:

Mix the dry ingredients in a bowl and set aside.
Place a heatproof bowl on the stove or in the microwave - add milk and butter and heat. (just warm enough to melt the butter)
Once milk mixture is warm add Chai Concentrate and Kithul Treacle and stir.
Add the egg yolk and milk mixture into the bowl of dry ingredients and whisk together.
Whisk till everything is fully combined together and let the batter sit for about 5 - 10 minutes.
Place a skillet over the stove on medium heat and lightly grease with butter.
Scoop out and pour in 4tbsp of batter into the skillet.
Cook for about 2 minutes - now flip and repeat till pancake is light golden brown.
Stack the pancakes on a plate drizzle with a favourite sweetener of your choice. Maple syrup, Honey, Kithul Treacle, butterscotch or chocolate sauce . We used our own chai infused butterscotch sauce.

200g brown sugar
375 ml thickened cream (heavy cream)
2 tbsp Chai Concentrate
70g unsalted butter

How to make:

Bring all ingredients to a boil in a small pan. Reduce heat and simmer for 5 minutes.

Eggnog is one of those drinks that you just can’t explain how it tastes like to someone other than just that it tastes wonderfully like Christmas.

We absolutely love having eggnog during the festive season and who doesn’t love a good cuppa chai latte to kick start their mornings? So, we decided to combine the two and give this delicious seasonal treat a Tea Drop twist!

What you need

700ml milk
6 egg yolks
200g brown sugar
4 tablespoons Tea Drop chai concentrate
240ml dark rum, spiced rum, brandy, or cognac (optional but recommended)
350ml heavy cream

How to make eggnog

Add milk to a saucepan over medium heat, let it steam but not simmer.
In separate bowl, whisk 6 egg yolks until they are slightly lighter in color. Add sugar while continuing to whisk the yolks until thick and creamy.
Add small amounts of warm milk to yolk mixture while whisking, once the mixture is warm you can add it to the pot.
Add 4 tablespoons of Tea drop chai concentrate. Continue to boil at a low heat until it is thickened.
Pour through a strainer into a bowl and whisk the heavy cream.
Put bowl into an ice water bath and mix occasionally for 5 – 10 mins until it becomes cold.
Transfer the eggnog into pitcher or punch bowl and serve in individual glasses.

How To

Classic Hot Chocolate

Ingredients

2 tablespoons Tea Drop Artisan Drinking Chocolate\n
30ml hot water
200ml milk of your choice

How to make Classic Hot Chocolate

Add 20g of chocolate (2tbs) into a mug.
A little bit of hot water and make a paste.
Pour a little hot milk and stir/mix it up.
And then slowly pour the rest of the milk so it becomes chocolaty.
Garnish - Grate your favourite chocolate bar on top. We use dark chocolate mint

Whipped Iced Chocolate

A super delicious, rich, and kid-friendly version of the popular Dalgona Coffee.

Ingredients

2 tablespoons of Tea Drop Artisan Drinking Chocolate
1 table spoon hot water
60ml heavy whipping cream
120ml milk of your choice

How to make Whipped Iced Chocolate

Whisk chocolate powder, hot water, and heavy whipping cream in a small bowl.
Add ice and milk to a glass.
Top the milk with whipped chocolate.
Stir and serve immediately.

Chai Spiced Hot chocolate

Chocolate and chai don’t make an appearance together very often, and it’s a shame because it’s a fantastic combination.

Ingredients

4 tablespoons of Tea Drop Chai concentrate\n
2 tablespoons of Tea Drop Artisan Drinking Chocolate
230ml milk of your choice
Whip cream and grated dark chocolate for garnish

How to make Chai Spiced Hot chocolate

Place milk in a saucepan on medium heat and add chai concentrate to milk.
Add chocolate powder in a cup and add a splash of hot water, mix until it becomes a paste.
Add this to the milk and stir well. Leave to gently simmer.
Pour chai chocolate into a mug, top it off with whipped cream and garnish with dark chocolate shavings.

Frozen Hot Chocolate

If you love hot chocolate but want to switch things up a little, then you’ve come to the right recipe for that. Also, the word “hot” maybe a little deceptive because this is still a cold drink.

Ingredients

4 tablespoons of Tea Drop Artisan Drinking Chocolate
4 cups ice
200ml milk of your choice
Whipped cream and chocolate sprinkles to garnish

How to make Frozen Hot Chocolate

Add chocolate powder, milk and ice to a blender and blend until smooth

Made right in the heart of Melbourne, this artisanal chai brew is blended in small batches and infused with whole leaf black tea, ginger, cardamom, clove, cinnamon, star anise, nutmeg, black pepper & Redgum honey sourced from the flourishing Redgum forests of Australia, to give the blend a whole new level of spice and an enhanced flavour profile.

How to make a traditional chai recipe using our Honey Spiced Sticky Chai

Place 2tbsp of sticky chai to jug.
Cover the chai with hot water (30ml) and allow to brew for 1-2mins.

How to make a traditional chai recipe using Chai Concentrate

Pour 35ml of Chai Concentrate and 140ml milk of your choice.
Steam together to 68C.

Tips on frothing the milk at home

Most find frothing the milk the hardest step when making a homemade chai latte. You don't have to have a fancy espresso machine or a milk frother to whip up frothy milk. You can create the creamy texture simply by whisking or blending. Whisking works best for dairy-based milks while blending is best for soy, coconut, and nut-based milks.

\nWhisk - Heat the milk on medium to high heat. Use a hand mixer or a metal whisk to vigorously beat the milk. It should take just a few minutes to have frothy milk.
\nBlend - Use an immersion blender to froth your milk. For best results, blend the milk before heating it on the stove. Alternatively, you can shake the milk in a large glass jar or a cocktail shaker. Once you add heat, the milk will froth and foam in minutes.

We source all our white teas only from the traditional region of Fuding County, Fujian. Fuding is one of the main producing areas for white tea in China. It’s surrounded by highlands with spectacular rock formations, caves and towering mountains, including the famed Taimu mountain – known as ‘Paradise at sea’. The region is awash with rolling hills, fresh streams and forests. The hilly territories with their red and yellow soils and the year-round mild climate and consistent rainfall contribute to the unique flavour of the white tea produced here.

Green Tea

Our artisan range of green teas are sources from 3 distinctive tea growing regions. Sri Lanka, Japan & China.

Sri Lanka (Kandy Region) - The tea industry was born in Ceylon when James Taylor started a tea plantation in Loolecondera estate in Kandy in 1867. He was drawn to this medium grown region and it’s not hard to see why, the Kandyan Hills are spectacular - marked by a cool, calming atmosphere and heady fragrant breezes. It is one of Sri Lanka’s most flourishing tea growing regions, but it was also the last Kingdom of Sri Lanka. Known as the central province of Sri Lanka, the tea estates are dotted in the hills surrounding the low-lying valley of Kandy. The altitude is considered ‘mid-grown’, the estates are surrounded by mountains all around, which protects them from wind and helps produce a deeper-coloured, bright and fragrant tea.

Our green teas such as Honeydew Green, Strawberry Green & My Marrakech are directly sourced from Sri Lanka’s medium grown region.

Japan – Our Gyokuro Prestige, Genmaichai & Yuzu Kukicha green teas are sourced from the beautiful Shizuoka Prefecture in Japan. Known to be the largest tea producing region of Japan, Shizuoka is also one of the country’s most beautiful tea-growing areas, framed by the towering peak of Mt Fuji. The region is climatically perfect for tea cultivation, with fresh water, sun, heavy mists and nutrient-rich volcanic soil. There’s sun, extreme temperature fluctuations and heavy mists. This unusual terroir, produce a distinctive regional flavour.

The best senchas in Japan hail from the mountains of Kirishima in Kagoshima. Kagoshima is surrounded by volcanic landscapes and ocean, a beautiful and effective combination for tea cultivation. The endless sunshine and mild climate, along with the volcanic soil, combine to create the perfect conditions for sencha. Our Japanese sencha is made by Yutakamidori cultivar and the tea is processed and grown in a very particular way to ensure quality and avoid oxidization.

China – China is the largest green tea producing country and we source unique green tea blends from directly from origins.

Huangshan Mountain is one of China’s most famous and beautiful, and it’s also home to some of the best green teas in the country. Our Huangshan Mao Feng tea is sourced from this breathtaking region.

Longjing village is situated Hangzhou in China’s Zhejiang province – which has a moderate climate and high altitude, perfect to produce tea and our Longjin Tea hails from this region. The misty fields are nourished by low fogs and running streams. The leaves are picked and roasted on the same day, and the roasters use their bare hands to feel the heat and dryness of the leaves as they roast.

Hunan borders several other tea-producing provinces. The word ‘Hunan’ means south of the lake, because the renowned Dongting lake can be found just south of the border. We source our oolong teas from a few different regions of China.

Fujian Anxi, a county in the southern Fujian province, known to many as the Tea Capital of China. The tea plantations are in the lush mountains and hills, green and sprawling. As beautiful to look at as they are to harvest tea from. The soil is rich thanks to constant rainfall and a moderate sub-tropical climate and yields the high-quality tea that Anxi is famed for. The high altitude and cool climate produce sweeter leaves than the hotter lower-lying regions, and the mountainous terrain allows for excellent drainage.

Our oolong teas such as Milk Oolong, Jasmine Oolong, Tie Guan Yin, Ginseng Oolong, Oolong Rose, Kiwi Berry & Sweet Peach are sourced from this region.

Our Da Hong Pao tea is sourced from the scenic mountainous region of Wuyishan is home to Wuyi Oolong. Stretching along the northernmost border of the Jiangxi province, the mountains of Wuyi are home to 36 soaring peaks and the beautiful Nine Bend Creek – a river that undulates through the wild terrain. Tea sustains life here, there are tea gardens and teahouses dotted throughout the region, run by the Wuyi mountain people. Wuyishan has become an Ecological Preserve and is now protected from development – there are also laws in place to ensure tea production is environmentally sustainable. The abundance of native forest that flourishes here as a result, has created a beautiful habitat for birds and insects. This has encouraged the production of polyphenols in the tea, which generate a distinctive, rich flavour.

Sri Lanka – Our black teas are produced in the Kandy & Ruhuna regions in Sri Lanka. Ruhuna’s low-grown long leaf, full-flavoured black tea combines beautifully with the rich and fragrant tea from medium-grown Kandy. The distinctive flavour and exceptional quality of the sweeping coastal Ruhuna leaves add a layer of distinctive complexity to the blend, while the protected, lush rolling hills of Kandy and its full-bodied plants bring richness to the tea.

We source our Pu Erh teas from Menghai, a county in the Yunnan province of China. It’s tucked into the southernmost corner of the country and shares a border with Myanmar. The Process

Cultivated from a larger leaf strain of camellia sinensis “Dayeh”. These ancient tea trees with matured leaves are known to be between 500 and 1000 years old. These trees are grown in pleasant regions and can be harvested all year-round, but some experts say the best time to harvest is mid-spring.

There are two types of Pu-erh teas: Raw Pu-erh (Sheng) and Ripe Pu-erh (Shou).

The raw Pu Erh method is made from green tea leaves that are processed in the green tea method. Then the dried tea is compressed into cakes and balls and then aged in a dark location, often for many years. During this time the tea undergoes a form of oxidation caused by the growth of yeast on the tea. The tea is lighter and bright yellow when brewed. The leaves are dark green when dry and boast a mild, slight sweet after taste flavour profile.

The ripe Pu Erh method is made from black tea leaves and is processed the same as raw Pu Erh until the compressing stage. The ripe Pu Erh goes through a process called piling, where the leaves are placed in piles of 25 to 30 inches in height. The leaves are then sprayed with water and covered with a linen cloth which increases the speed of oxidation and changes the colour and flavour of the tea. This tea has a deep amber colour when brewed.

The aging process allows the Pu Erh teas to improve with age like fine wine and is said to retain their freshness for up to fifty years.

Taste

Conditions and environmental factors can influence the flavour profile of pu-erh tea. Smooth, fruity, peaty, grassy, musky, herbal and earthy are the flavour characteristics of this delightful tea.

Best times to drink

Pu Erh tea has caffeine and by drinking a cup in the morning or early afternoon, can help increase energy levels. If maintaining weight loss goals, the best time to consume a cup will be one hour after a meal.

How to brew

This tea is traditionally brewed at a higher temperature and can be steeped multiple times to experience the different flavour profiles of the tea.

Preheat your teapot and all utensils by swirling with a little hot water and discard. This is to ensure your tea steeps precisely at the proper temperature and use the right amount of water for brewing.
Place 5g of Pu Erh loose leaf in tea pot.
Rinse the leaves by pouring a little hot water over them, swirl, and discard this \"wash\". This removes any small pieces of debris and coaxes the leaves to unfurl to be ready for steeping.
Fill the teapot with 350ml hot water at 95 to 100 Celsius. Do not use boiling hot water as it can result in bitter flavours.
The steeping time of a Pu-erh tea is generally 1 to 2 minutes. If you want to experience the different flavour profiles of the tea, you can brew the tea up to 3 times. 1st brew - 2 mins, 2nd brew - 3 mins, and 3rd brew - 4 mins.

15g Loose Leaf My Melbourne Tea
1 tbsp Kithul Treacle (or sweetener of your choice)
200ml water

How to

\n Brew 15g of My Melbourne Tea in 200ml hot water at 99°c and let it steep for 2 - 4 minutes.
Once tea is brewed pour into an ice cube tray and freeze.

To Serve:

Pop out the My Melbourne cubes and add to a glass and pour milk and sweetener of your choice.

Here is an easy to make iced tea popsicle recipe for a deliciously refreshing summer treat. These homemade healthy popsicles only need 3 ingredients. Your favourite tea, cold water and a sweetener of your choice and of course a popsicle mold.

How to choose the right popsicle molds

There are a lot of various kinds of different molds for popsicles. It doesn’t matter what shape you use. These iced tea popsicles will taste amazing. You can even use a paper cup by pouring the tea brew into it and just insert a stick. It’s that simple.

What you need

15g Loose Leaf Tea
1l Cold water
2tbsp honey or sweetener of your choice
Popsicle mold

How to make

Select your favourite tea and measure 15 grams of the loose-leaf tea into a jug.
We have used Fruits of Eden, Tropical Sky, Mango Magic & Sweet Peach.
Add 1 ltr of cold water. There’s no need for a specific temperature, cold filtered water from the tap will be just fine.
Let it steep overnight.
The next day, strain the tea, discarding the steeped loose leaf.
Stir in the honey.
Pour the tea into your popsicle mold and place in freezer until it’s frozen solid.
Remove from the mold before serving.

100g 70% dark chocolate (chopped or buttons)

While it’s often enjoyed hot, Hojicha’s roasted profile makes it a superb candidate for a chilled brew. As we welcome warmer days, we’re pairing iced Hojicha with a dessert that elevates the tea experience even further.

How to Brew the Perfect Iced Hojicha

Making iced Hojicha at home is easy and allows you to fully appreciate the tea’s subtle complexity.

What you’ll need:

1 tsp Tea Drop Hojicha

30mlof hot water (70°C)

Ice cubes

180 ml of Milk of your choice

Optional: a touch of honey or maple syrup for a sweet finish

Instructions:

Add 1 tsp of Tea Drop Hojicha to a heatproof cup or small bowl.

\n
Pour in 30 ml of hot water (at 70°C) and whisk well to release the roasted aroma and flavour.

Fill a glass with ice cubes.
\n
\n
Pour in 180 ml of your preferred milk over the ice.
\n
Add a touch of honey or maple syrup, if desired, and stir to combine

Gently pour the brewed Hojicha concentrate over the milk.

\nElise's Passionfruit Drizzle Cake with Passionfruit Frosting

Ingredients

For the cake:

150g unsalted butter, softened
160g granulated sugar
2 large eggs
1 tsp vanilla extract
50g strained passionfruit juice/pulp (seed-free)
Zest of 1 lemon
100ml buttermilk
200g plain flour
2 tsp baking powder
1 tsp salt

For the drizzle:

80ml lemon juice
80g icing sugar
2 whole passionfruit (juice and seeds)

For the frosting:

250g icing sugar
2-3 tbsp strained passionfruit juice (from the pulp of 2 passion fruits)
1 tsp vanilla extract

Instructions:

Preheat your oven to 170°C. Grease and line an 8-inch round cake pan with baking paper.
In a large bowl, cream together the softened butter and granulated sugar until light and fluffy, about 3-5 minutes.
Add the eggs, one at a time, beating well after each addition. Stir in the vanilla extract, passionfruit juice/pulp, and lemon zest.
In a separate bowl, whisk together the flour, baking powder, and salt.
Gradually fold the dry ingredients into the wet mixture in two or three additions, alternating with the buttermilk. Mix until just combined, ensuring no lumps remain.
Pour the batter into the prepared tin and smooth the top. Bake for 40-50 minutes, or until a skewer inserted into the center comes out clean. Let the cake cool in the tin for about 10 minutes before transferring to a wire rack to cool completely.
While the cake is cooling, mix the lemon juice, icing sugar, and passionfruit juice (with seeds) in a small saucepan and heat over a low flame to dissolve. Poke a few holes in the top of the cake using a skewer or fork. Pour the passionfruit drizzle over the cake, letting it soak in. The juicy drizzle will add a burst of flavor and moisture.
When the cake is cool, use a medium bowl to mix the icing sugar with the passionfruit and vanilla. Adjust the consistency by adding a little more icing sugar or passionfruit juice if needed.
Once the cake is fully cool and the drizzle has soaked in, spread a generous layer of the passionfruit frosting over the top. You can use a spatula to smooth it out.

May is the month the world pauses to celebrate tea. International Tea Day, designated by the United Nations and observed on 21 May, recognises tea's role in culture, trade, and the livelihoods of millions of farmers worldwide. It is a moment to think beyond the cup: to the hands that picked the leaf, to the communities built around the gardens, to the ancestral knowledge preserved in every harvest.

It is also, not by coincidence, the month Tea Drop was born.

Twenty-two years ago this May, Ashok Dias founded Tea Drop in Melbourne, and the fact that our anniversary falls in the same month the world gathers to honour the leaf has always felt like more than chance. May is, for us, a season of reflection: on where tea comes from, on what it means to do it well, and on why any of this matters.

For Tea Drop, International Tea Day is not ceremonial. Ethical sourcing through the Ethical Tea Partnership has been part of the business model since the beginning, ensuring fair conditions for every picker at the estates we work with. Sustainability runs through the entire supply chain, from FSC-certified packaging to fully biodegradable pyramid bags and soft-plastic-recyclable pouches.

On ritual, tradition, and the patience of good tea

There is a particular kind of patience required to make great tea, and an equal patience required to appreciate it. The ritual of boiling water, choosing a blend, watching the pyramid bag bloom in the cup: these are small acts that do something measurable to the pace of a day.

Tea culture has always understood this. High tea traditions across Britain, gong fu ceremony in China, the elaborate preparation of Japanese matcha, the daily chai ritual across the Indian subcontinent — all of them are expressions of the same truth: that the act of making tea is inseparable from the act of drinking it.

International Tea Day exists in part as a recognition of that tension: a reminder that the alternative still exists, for those who seek it out.

Twenty-two years in Melbourne

Ashok grew up in Sri Lanka, in a family with three generations of tea merchants and farmers behind them. He came to Australia not simply to sell tea, but to reconnect a new audience with the soulful, careful work that precedes every cup. That mission has not changed.

This May, as Tea Drop turns 22 and International Tea Day approaches, the occasion feels less like coincidence and more like purpose.
