Chai Eggnog
Eggnog is one of those drinks that you just can’t explain how it tastes like to someone other than just that it tastes wonderfully like Christmas.
We absolutely love having eggnog during the festive season and who doesn’t love a good cuppa chai latte to kick start their mornings? So, we decided to combine the two and give this delicious seasonal treat a Tea Drop twist!
What you need
- 700ml milk
- 6 egg yolks
- 200g brown sugar
- 4 tablespoons Tea Drop chai concentrate
- 240ml dark rum, spiced rum, brandy, or cognac (optional but recommended)
- 350ml heavy cream

How to make eggnog
- Add milk to a saucepan over medium heat, let it steam but not simmer.
- In separate bowl, whisk 6 egg yolks until they are slightly lighter in color. Add sugar while continuing to whisk the yolks until thick and creamy.
- Add small amounts of warm milk to yolk mixture while whisking, once the mixture is warm you can add it to the pot.
- Add 4 tablespoons of Tea drop chai concentrate. Continue to boil at a low heat until it is thickened.
- Pour through a strainer into a bowl and whisk the heavy cream.
- Put bowl into an ice water bath and mix occasionally for 5 – 10 mins until it becomes cold.
- Transfer the eggnog into pitcher or punch bowl and serve in individual glasses.

Ingredients
Matcha White Chocolate Truffles
- 200g white chocolate
- 100ml cream
- 10g unsalted butter
- 25g Tea Drop Pure Organic Matcha, plus extra for dusting
Milk Chocolate Matcha Truffles
- 200g milk chocolate
- 100ml cream
- 10g unsalted butter
- 25g Tea Drop Pure Organic Matcha
- Cocoa powder for dusting
Pistachio & Date Truffles
- 200g milk chocolate
- 100ml cream
- 10g unsalted butter
- 4 chopped dates (soaked in 3 tbsp coffee liqueur)
- 200g toasted pistachios (reserve some for coating)
- 1 tsp Tea Drop Pure Organic Matcha
Method

Prepare the truffle base:
- Melt the chocolate, cream, and butter together in a heatproof bowl over simmering water (or microwave in short bursts). Stir until smooth and glossy.

Add flavour:
- For Matcha White Chocolate and Milk Chocolate Truffles: Whisk in the Tea Drop Pure Organic Matcha until fully combined.
- For Pistachio & Date Truffles: Stir in the soaked, chopped dates.

Chill the mixture:
- Cover the bowl with cling wrap and chill in the fridge for at least 4 hours or until the mixture is firm enough to roll.

Roll and coat:
- Roll teaspoon-sized portions of the truffle mixture into balls.
- For Matcha White Chocolate Truffles: Dust with extra Tea Drop Pure Organic Matcha.
- For Milk Chocolate Matcha Truffles: Roll in cocoa powder.

Tea Infused Desserts

Today, we’re sharing a delightful combination: Berry Glazed Earl Grey Tea Cake paired with Sweet Peach Iced Tea—a match made in tea heaven!

Cake Ingredients:

220g sugar

2 large eggs

200g natural yoghurt

5 tbsp bergamot-infused olive oil

1 tsp vanilla extract

3 tbsp Supreme Earl Grey tea

200g melted butter

250g plain flour
-
1 tsp salt

2 tsp baking powder
Method:

Blitz the sugar and eggs in a food processor until smooth.

Add the yoghurt, infused olive oil, and vanilla extract. Blitz to combine.

Add the remaining ingredients and blitz until just combined (less than 3 seconds).

Pour into a lined cake tin and bake at 180°C for 30 minutes, or until a skewer inserted in the centre comes out clean. Allow to cool in the tin.
Glaze Ingredients:

1/4 cup strawberries, mashed

2 blackberries, mashed
-
3/4 cup icing sugar (powdered sugar)
Method:

Mash the strawberries and blackberries together in a bowl until you have a chunky puree.

Sift the icing sugar into the puree and mix until smooth.

Drizzle the glaze over your cake and let it set before serving.
